昨日記したものを少々詳しく調べてみた。

MICHTER'S WHISKEY 101PROOF
こちらは、Bourbonを嗜む方でも、知っている方はそう多くない。私も、20年くらい前にBarで見たことがある程度だったし、よくわかっていなかった。その酒屋の端っこの方でおいてあったのを見て、「どっかでみたことあるなぁ」と思って手に取ったに過ぎない。Bourbonの特級時代ものに「ハズレ」は少ないので、安いし買ってみようかなというくらいのものだった。

あまり知られていないのは当然で、既に18年も前に閉鎖されている。Net上でも日本語での情報はないに等しい。海外、特に米国筋の情報を拾ってみたところを記してみよう。

In 1753, John Shenk, a Swiss Mennonite, began converting his excess grains to whiskey along the banks of Snitzel Creek and thus established the distillery that was to become Michter's. The distillery passed hands through various members of the Shenk family until acquired by Abe Bomberger in 1861, who operated the distillery until Prohibition. Michter's is the oldest operating distillery site in the United States.

So Michter's Pot Still Whisky hit the market in 1956. Michter's, as the distillery became known in 1975, finally closed in 1988 after making the only post-Prohibition pot still Bourbon in America.

Adolf Hirsch, a former executive of the Schenley Co., bought some aged stocks of the whiskey. He bottled a 16-year-old and a 20-year-old under the A.H. Hirsch label. Though the Hirsch brand is still found on store shelves today, the whiskies - which were long ago transferred to stainless steel to keep them from aging further - are now owned by the Hue family (operators of the Cork 'n' Bottles stores in Covington, KY), and Henry Preiss (animporter/distributor based in Ramona, CA.).

Preiss has preserved the brand name by creating "Hirsch Selections" bottlings using purchased whiskies, but the original stuff is on borrowed time. So take a closer look at those dusty bottles at the corner store - you might snatch up some bottled history.

いろいろと調べたところでは、上記に記されているように、米国においてもっとも古くからある蒸留所、1753年である。場所は、PennsylvaniaのSchaefferstown。禁酒法時代以後もポット・スティルで蒸留を行っていた唯一の蒸留所ということだ(Bourbonは連続式蒸留器で創られるのが普通)。原料は、ライ麦38%、コーン50%、大麦麦芽12%であり、こちらを使ってできたもろみを醗酵させる。醗酵時にバーボン独特の「Sour Mash」を使うのは他のバーボンと同じ。でもって、スコッチのようにポット･スティルで蒸留となる。原材料の区分からの分類上では、BourbonにもRyeにも属さないことになるようだ。PennsylvaniaWhiskeyとか、もっといえば、ひとくくりにAmerican Whiskeyというしかないだろう。（裏のラベルなども参照)。閉鎖後も、残っている樽から細々とネーミングを変えて販売したようであるが、それも1992年には終了したらしい。

肝心の味わいであるが、Net上には、詳しいコメントを見つけられなかったので、あくまでも私個人の嗜好に基づくもののであることをお断りしておく。（しかも私はMaltのみであり、Bourbonはそれほどテイスティングしたことがない)
初めはそれほど香りが強くはない。無理もないだろう、20年から25年もの間放って置かれたので寝ぼけているようなものかもしれない。10分ほど置いておいたら次第に香ってきた。やさしめのバニラ香、熟したフルーツ、長熟感のあるラムっぽさも感じる。甘くまろやかに香る。時間が経つほどによくなっていく。舌に乗せると一瞬ピリッと来るドライさから、鼻に抜ける感じは甘みを伴ってふくよかに広がる。余韻の中程度でいい。普段Bourbonを嗜むことが多くない私でさえ、これは好ましいWhiskeyである。すごいおいしいというほどではないが、飲み飽きすることもないさそうな感じだ。じっくり飲みながらリラックスするにはいいと思う。
