苦肉の策の小ネタ☆ いいよ~、ハーブオイル!
Scroll down to find English version: なーんかまた忙しくって、なかなかPC見れないよ~!大ネタ書いてる時間が無いから、今日は自分で作ったお手軽すぎるディルオイルのハナシ、行ってみよ~!ディルって、ちょっと使うにはすごいオイシイんだけど、どーしても余るんだよねぇ~。楽ちゃんがやってた塩バジルみたいに、塩ん中にぶっこんじゃうと、葉っぱが繊細だからボロボロ取れそうじゃない?で、どぉしたかって言うとディルオイル作っちゃった♪あ、また手抜きだけど![1] 皿の上にキッチンペーパー乗せて、その上に予め洗ってざるに上げといたディルを乗せて、500wで1分間チン☆[2] ざっくり刻んで、熱湯消毒しといたガラス瓶に入れて、全体がかぶる位のオリーブオイルを入れて、1晩置いたら出来上がり!オイルに香りが移るから、オイルだけをそーっとスプーンですくい出してパスタの仕上げに使ったり、ラタトゥユの風味付けに使ったり、カルパッチョとかマリネに使ったりするとうまいんだよねぇ~!写真は山芋のカルパッチョ!塩、コショウをガリガリやって、仕上げにハーブオイルかけただけなんだけど、なかなかイケてたわよ~!オイルが無くなったらまた足して、今度は生ハムをジップ袋に入れて、オイルとワインビネガーを入れて、1晩馴染ませたり、サラダのドレッシングに使ったりってまた大活躍なんだよねぇ~!で、いい加減香りも飛んで来たから、トドメにオイルを足してミルサーで粉砕したよ! ポルチーニの茶碗蒸しにトッピングしたり、アボカドのくぼみに塩とオイルを入れて、スプーンですくって食べたり♪メキシコのナンタラチーズ(もらいもんなんだけど名前忘れた!)と、皮をむいたトマトとスモークした鴨を並べて、オイルをたら~っとたらしただけのカプレーゼちっくな前菜♪ 鴨とチーズの塩気があったから、コレはホントにオイルだけ!最初に加工した日から2週間くらいで食べ切っちまったってえらいイキオイなんだけど、お手軽、テクいらずでこんなに美味いなんて、またディル買っちゃうよ~!そだ、ポルチーニの茶碗蒸しね、粉末のポルチーニスープってのがあるんだわ。お湯でといて、とき卵入れて、チンして冷やして食べたんだけど塩辛いっ!しかも香りが飛んでてハーブの味が勝っちゃっててさ~!大失敗だったわ!良いコはマネしないでね!?そだ!週末はまたバタバタになりそうで、PC見れませ~ん!お返事遅れちゃいますけど、ミナサマ、良い週末を~♪ Going sodium-free!?Nah, hypertension is hardly my concern, my blood pressure is so low, I need moderate amount of salt to keep going! Did you know production and sales of salt was fully controlled by Japanese government until 1985? Until then, we only had salt that's 98% sodium chloride. Thanks to deregulation, I get to choose from natural salt rich in minerals to flavored salt (yuzu citrus, plum, kelp, red pepper, etc.) to zesty/exotic herb blended salt! To heck with yucky salt substitute, right? WRONG! My hubby got that hypertension and I have to resort to healthy alternatives like vinegar, herbs + spices, and other low-sodium condiments. You prob'ly won't be interested in how I reduced soy sauce and soybean paste intake, so I'll tell you how I hoard and keep fresh herbs: SWEET BASIL When I find fresh sweet basil on sale (50 cents a pack, that's an eighth of a regular price!), I pluck all the leaves and shove it in a ziplock and bury them in salt. This way, the leaves dehydrate and salt absorbs yummy scent of basil. The leaves will turn blackish green but the aroma is so much better than dry ones. When you use it, place as many leaves as you plan to use in a cup, pour water into the cup to rinse salt sticking around the leaves, pick out the leaves, squeeze water out of it, chop it, and use it as you normally use your dry herb. You'll see some salt at the bottom of the cup. You can use it to boil your pasta, veggie, or whatever. DILLPut a paper towel on a microwaveable dinner plate, place dill in the middle of the plate and nuke it for 30-60 seconds until the leaves are darker and the paper is damp. Chop it (1 inch long), put it in a jar, and add extra virgin olive oil until dill goes completely under the surface, leave it overnight, and it's ready to go! You can use it for dressing, pasta, and carpaccio. It's also good for roasted chicken and fish. Use oil only though, semi-dried plant is not exactly easy to chew. When you use up the oil, just add some more! If the flavor goes weak, it's time to stick it in your blender! Pour the oil and the herb into the blender, close the lid, and let it spin for 10-20 seconds. All that robust aroma of fresh herb comes back! I peeled tomatoes, sliced some Mexican cheese (I forgot the name) and smoked duck, and topped it with oil alone. A little salt and the oil on avocado was also yummy! Problem is --- this goes too well with wine and my alcohol intake goes outta control!!!
