キャンディードスウィートポテト/アップルクランベリーソース
感謝祭になると必ず作るのが、キャンディードスウィートポテト/ヤムとクランベリーソースの2つです。(写真左手の2つ)エピキュリアスからのオリジナルのレシピにはブラウンシュガーは使われていないのですが、私は少しだけブラウンシュガーも足しています。 Candied Sweet potatoes/Yams材料(4人分) 2 pounds garnet yams or sweet potatoes(だいたい3本)(彩りのため、2/3がスウィートポテトで1/3をヤムにします)3 (2-inch) strips orange zest, white, spongy pith removed2 cinnamon sticks, broken in half(シナモンパウダーで代用)1/2 cup freshly squeezed orange juice1/3 cup pure maple syrup (プラス brown sugar 大さじ1ぐらい)2 tablespoons pure olive oil1 tablespoon freshly squeezed lemon juice2 teaspoons peeled and finely grated ginger root1/2 teaspoon coarse sea salt作り方1)Preheat the oven to 375°F.2)Peel and halve the yams crosswise. Cut each half lengthwise into 4 wedges.(皮をむいてから1センチぐらいの厚みに斜め切りにしてます)3)Place the yams in a baking dish that will hold them in a snug single layer. Tuck the orange zest and cinnamon sticks among the yams.(1センチの厚みであれば、シングルレイヤーでなくても大丈夫、15X9インチの耐熱皿使用)4)In a bowl, whisk together the orange juice, maple syrup, oil, lemon juice, ginger, brown sugar and salt. 5)Pour the mixture over the yams.6)Bake for 1 1/4 hours, basting every 15 minutes, until the yams are tender and glazed and the pan juices are syrupy.(15分おきに必ずチェックしてください、放っておくとドライになってしまいます 最後の15〜20分はアルミホイルをかぶせておきます)7)remove cinnamon sticks before serving. (シナモンパウダーを使用している場合は7)のステップは関係無し)焼いた七面鳥のお肉にはグレーヴィーソースや甘酸っぱいクランベリーソースをかけて食べると美味しいのです。残りのターキでサンドイッチを作る場合に、マヨネーズ、クランベリーソースをぬるととても美味しいサンドイッチが出来ます。 アップルクランベリーソース材料1/3 cup orange juice2 apples, such as Granny Smith or mcIntosh3 cups fresh cranberries (1 bag )1 cup sugar1/2 teaspoon cinnamon1/2 teaspoon ground clove作り方1)Peel, quarter and core the apples. Cut into 1/2 inch dice and place in a saucepan.2) Add cranberries and orange juice, sugar, cinnamon and cloves into the saucepan.3) Bring to a boil over high heat, reduce the heat to low and cover the pan partially. Simmer gently, stirring occasionally,until the sauce thickens, the apples are tender and the cranberries have burst, 10 to 15 minutes.4) transfer the cranberry sauce to a heatproof bowl and let cool for 1 hour before serving. Or covered and refrigerated; bring to room temperature before serving.
