Flag-Raising Apple Pie
久しぶりにちょっと変わったアップルパイを作ってみました。このレシピは何年か前にローカル新聞に載っていたものです。市販のパイ生地を使っているので作るのは割と簡単です。でも日本人にとってはかなり甘いかな~ところでこのシュトロイゼルという聞き慣れない言葉、これはドイツ語です。In baking and pastry making, the term streusel (a German word meaning "something scattered or sprinkled", from the verb streuen, akin to the English verb 'strew') refers to a crumb topping of butter, flour, and sugar (traditional German) that is baked on top of muffins, breads, and cakes (e.g. Streuselkuchen). Flag_Raising Apple PieIngredients (Serve 6 to 8)Pastry1 (9-inch) unbaked piecrustStreusel1/2 cup light brown sugar1/2 cup granulated sugar1 cup flour4 ounce (1/2 cup) unsalted butter,(at room temperature)Filling1/4 cup dark brown sugar1/4 cup granulated sugar3 and 1/2 cup tablespoons flour1/2 teaspoon cinnamon1/4 teaspoon nutmeg3 pounds (6 or 7) firm, tart apples,peeled, cored and cut into 1/8-inch slices(about 8 cups)1 tablespoon lemon juice3 tablespoons unsalted butter, meltedInstructionsStreusel1) Combine ingredients in a large bowl and, using your fingertips,mix until the mixture resembles coarse crumbs. ( You should have 2 and 1/2 to 3 cups of streusel.)2) Set aside half of the streusel; freeze or refrigerate the other half for another time.3) Adjust rack in lower third of oven; preheat oven to 450FFilling1) Mix together the sugars, flour and spices in a small bowl.2) Place apple slices in a large bowl, sprinkle with the dry mixture and toss gently and briefly with a rubber spatula. Sprinkle with the lemon juice and melted butter, tossing again just to combine.3) Spoon the filling into the pastry-lined pan, spreading the fruit slices evenly. They will mound higher in the center.4) Apply the streusel to the pie, patting it to form a thin topping on the fruit slices.5) Bake for 10 minutes. Reduce oven temperature to 350F and bake until the crust is golden and the apples are juicy and tender. ( Total baking time is 40 minutes to 1 hour, depending on type of pie pan and apples used.)6) Remove from oven to a cooling rack. 7) Serve lukewarm or at room temperature with vanilla ice cream or frozen yogurt.
