シュークルート(Choucroute)サワークラウト(Sauerkraut)
雨期の真っ最中のカリフォルニア、戸外でのアクティビティーも限られちゃいます。久しぶりに2007年春にフランスに行ったときのアルバムを眺めました。そしたら、どういうわけか、シュークルートが無性に食べたくなってしまった私。この聞き慣れない ”シュークルート” はフランスのどこのブラッスリーにも定番として、メニューに載っている人気メニューの一つなんです。シュークルートとは、塩漬けして発酵させた細切りのキャベツの事です。英語ではサワークラウトと言っています。この料理は日本ではドイツ料理、ザウアークラウトと言う名前で知られているようですが、フランスではドイツと隣接するアルザス地方の特有料理です。作り方はとても簡単! シュークルート(サワークラウト) Ingredients(serves 4) 1-1/2 lb. kielbasa, cut into 3" to 4" lengths, then cut in half lengthwise 8 sliced bacons( cut in half) 2 Tablespoons olive oil 2 small onions, finely sliced 1 lb. sauerkraut with caraway, lightly drained(今回,私は600gぐらい使いました) 2/3~1 cup dry white wine 1 cup water 1 teaspoon chicken consomme 1~2 bay leaves 5~10 black pepper corns 4 boiled potato ( cut into 4 to 6 pieces) Directions1) Heat the oil in a skillet and brown the sausages, cut sides down. Turn over and cook on other side about 2 minutes. Remove and set aside. 2) Add the onions and cook about 5 minutes to soften. 3) Return the sausages, cut side down and add bacon to the skillet. Add the drained sauerkraut and pour the wine over. 4) Add the water, chicken consomme and boiled potatoes and cook for about 20~30 minutes. 5) Transfer the sauerkraut to a warmed plate and place the sausage and potatoes on top. Serve with Dijon Mustard.
