洋梨のポートワイン煮( Poached Pears with Ginger and Port )
お酒類は全く飲まない私....主人は大のアルコール好き....そんな主人が今はレント(lent)の期間なので、大好きなアルコールを断っています。なのでクリスマスからのポートワインがほんの少し残っていましたが主人はしばらくの間、お酒類を飲まないことになっているのでこのチャンスを利用して以前から作ってみたかった洋梨のポートワイン煮を作ってみました。残りがほんのわずかの1/4カップだけだったけど、epicuriousのレシピでは必要なポートワインは1/4カップのみ。このレシピのポイントはショウガの薄切りを加えて煮てあるところです。意外な組み合わせだけど、なかなか美味しいデザートになりました。レシピでは30分~40分とありましたが、私は1時間かかりました。その他、洋梨を使ったデザートで私たちのお気に入りが洋梨のタルトこのタルトもお勧めです。 洋梨のポートワイン煮材料(4人分)洋梨(Bartlett, Anjouなど) 2個(縦半分に切って)ショウガ 3~4cm(皮をむいて薄切りに)水 4カップグラニュー糖 1/2カップ弱ポートワイン 1/4カップマイヤーレモンジュース 大さじ2(小レモン1個分) 作り方1)鍋に800ccとショウガの薄切りを入れて10分ほど煮ます (このショウガを煮てできた生姜湯は捨てずにハチミツなど入れてドリンクに)2)鍋に4カップの水、ゆでたショウガ、砂糖、ポートワイン、レモンジュース を入れて煮立てます3)洋梨の皮をむいて縦半分に切って鍋に静かに入れて時々ひくり返しながら 洋梨が柔らかくなり、色づくまで50分から1時間かけて煮ます梨そのものの形を活かしたい人はそのままで... しかし、半分に切った方がゆで汁がかぶりやすいし盛りつけも楽!4)煮た洋梨をていねいに大きめの網などですくいお皿にのせます5)残ったゆで汁(この時点で1カップちょっとありました)を3/4~1/2 カップになるまで煮詰めてシロップを作ります (煮て甘くなったショウガの薄切りもショウガ好きの私には美味しかったです)6)温かいままでも、冷蔵庫で冷やしてもどちらも美味しいです お皿に取り分けて、シロップをかけてクレームフレッシュや バニラアイスを添えて..... Poached Pears with Ginger and Portingredients (serves 2)a 1 1/2-inch piece fresh gingerroot2 firm-ripe Bartlett, Anjou, or Comice pears with stems intact3 to 4 cup water1/2 cup sugar1/4 cup Tawny Port2 tablespoons fresh lemon juicepreparation1) Peel gingerroot and slice thin. Cut slices into thin strips and in a saucepan simmer in 1 quart water 10 minutes. Drain gingerroot and discard water.2) In a saucepan just large enough to hold pears lying on their sides bring 3 cups water to boil with gingerroot, sugar, Port, and lemon juice, stirring until sugar is dissolved.3) Peel pears, leaving stems intact, and cut a thin slice from bottom of each if necessary to enable pears to stand upright when served. 4) Arrange pears on their sides in poaching liquid, adding enough of remaining water as necessary to just cover. Simmer pears, turning them occasionally, until tender, 20 to 40 minutes depending on ripeness. 5) Carefully transfer pears with a slotted spoon to a bowl and boil poaching liquid until reduced to about 3/4 cup and slightly syrupy. Pour sauce over pears. Pears may be made 1 day ahead and cooled in sauce before being chilled, covered. Serve pears warm or chilled.
